UAE – At the recently concluded Gulfood Manufacturing 2024 in Dubai, Ishida revealed its groundbreaking Sentinel 5.0 system—a next-generation remote monitoring solution designed to enhance food manufacturing through data-driven insights, predictive AI, and automation.
Alongside this innovation, the company showcased cutting-edge weighing, packaging, and quality control technologies, including the IX-PD X-ray inspection system.
New era of machine monitoring
The Sentinel 5.0 marks the evolution of Ishida’s original Sentinel system, launched in 2016, which focused on data collection and machine monitoring for Industry 4.0 applications.
“Our initial product was aimed at digitizing and supporting customers, but we also had a locally-installed product, the Ishida Data Capture System (IDCS), for detailed data extraction,” explained Ian Hodgson, Systems General Manager at Ishida Europe. “Managing two similar systems was inefficient, so we merged their best features into Sentinel 5.0.”
The revamped platform not only collects data but uses AI to analyze and predict machine behavior. By identifying anomalies and cross-machine issues, Sentinel 5.0 provides real-time alerts and actionable insights, significantly improving productivity.
AI-powered maintenance and optimization
At the core of Sentinel 5.0 lies a generative AI engine that enhances machine maintenance and troubleshooting.
Operators can interact with the system to diagnose issues and receive suggested solutions.
“The AI-driven anomaly detection automatically flags potential problems and generates detailed reports for proactive intervention,” Ian said.
This predictive capability enables manufacturers to minimize downtime, optimize performance, and address operational inefficiencies.
“One customer saw a 15% productivity boost almost overnight after implementing Sentinel 5.0, simply by gaining better visibility into operational data. They’re now targeting a 30% improvement,” Hodgson noted a recent success story.
Seamless integration for current users
Upgrading to Sentinel 5.0 is straightforward for existing Ishida customers. Recent models are fully compatible, while older machines require only a software update, eliminating the need for additional hardware.

IX-PD X-Ray inspection: Advancing food safety standards
The IX-PD X-ray inspection system was another highlight of Ishida’s exhibit. It employs advanced dual-energy technology to detect smaller contaminants with higher precision.
“The system uses low and high-energy comparisons, coupled with advanced software, to identify minute foreign objects like fish bones,” Ian elaborated.
With fewer components and reduced noise interference, the IX-PD ensures longer operational lifespans and sharper imaging.
Tailored solutions for specialized needs
Ishida also introduced its CCW-AS-214 multihead weigher, which improves productivity and reduces energy consumption by 20%.
Notably, the Ishida Micro, the world’s smallest multihead weigher, delivers unmatched precision for ultra-low target weights, ideal for high-value items such as tea leaves.
For the fresh food sector, the 8-head Ishida Fresh Food Weigher (FFW) efficiently handles sticky or bruise-sensitive products, cutting giveaway to under 1% and reducing labor requirements.
“These innovations cater to niche markets where accuracy and efficiency are paramount,” Ian stated.
